- 4 lamb shanks

Instructions:
- Preheat the oven to 325°F (160°C).
- Season the lamb shanks generously with salt and pepper.
- In a large tangine or oven-safe pot, heat the olive oil over medium-high heat. Add the lamb shanks and brown them on all sides, about 3-4 minutes per side. Remove the lamb shanks from the pot and set them aside.
